Gut Healing Cabbage Beet Kraut (Sauerkraut) Recipe


Did you know that your immune system is totally related to your gut and the stronger the gut the stronger your immunity is? Your gut is also your second brain which means if you are suffering from anxiety, attention deficit issue, extreme mood swings and depression then healing your gut is the first step towards restoring your overall health. When your gut is not healthy or poorly functioning it can externally manifest as eczema and other skin issues. Conventional medicine treats eczema by further suppressing your immune system with heavy dose of steroids and mental conditions by suppressing it further with anti anxiety meds or anti-depressants that create a myriad of long term side effects. The best way way to heal your eczema, moods and boost your immune system is by healing your guts with fermented foods. You can also take additional probiotic supplement to help your gut heal. Here is an easy and yummy Cabbage Beet Kraut Recipe. You can also add Jalapeno, Carrot or any other veggie if you want.

Cabbage and Beet are both rich in antioxidants and are 2 of the best cancer preventing and cancer fighting foods! Garlic is an amazing immune booster too!

I don’t use any fancy tool to ferment my veggies but if you want you can buy a fermenting kit here.

2.5 pounds (1.1kg) Shredded Cabbage
2 Beets peeled and sliced
1 whole pod of garlic peeled
2 Tbsp. Himalayan Pink Salt or Sea Salt 

Mix the cabbage and salt and put it in a bowl.
Pound the cabbage, beet, garlic and salt mixture or squeeze it with your hands to make enough juice for fermentation.
Place this mixture into a glass container.
Pack it as tightly as you can, making sure no air bubbles form.
Place the lid tightly.
Keep it in a dark room.
Check cabbage every other day for 2 weeks to check if there is any leakage or not enough juice. Some people use salt water mixture as a top up juice if it’s drying up too quickly but I have never had that problem.
Let it sit for 2-6 weeks before using. I let this batch ferment for 4 weeks. But 2 weeks is enough too.

Enjoy your delicious probiotic rich Cabbage Beet Kraut. And yes, the color does change so dramatically thanks to those lovely beets!
